Homemade Honey Almond Saffron Brittle

‘Sohan’ is a traditional Persian saffron brittle toffee made in Iran originating in Qom. Here is a simple, delicious and vegan version by the talented @rosemary.2002; Honey almond saffron brittle.

The traditional version consists of wheat sprout, flour, egg yolks, rose water, sugar, butter or vegetable oil, saffron, cardamom, and slivers of almond and pistachio.

🔻 Featured Golchin Ingredients:
-2 tbsp Wild Forrest Honey
-2 tsp avocado oil
-1/2 cup slivered almond (can be substituted for most other nuts)
-1 tbs liquid saffron
-1 cup sugar (not carried by Golchin)
-Garnish: Golchin edible and fragrant rose buds

📌 Directions:

Step 1: combine the sugar and oil and honey in a small pot on medium heat , keep mixing until the sugar is dissolved then add almonds and liquid saffron.

Step 2: After 10-12 minutes remove from stove and very quickly take spoonful and make small circles/ovals on the non stick cooking sheet or foil.

Step 3: The brittles will harden as they cool (~1 mins) and ready to eat. Store in airtight container or zip lock bag at room temperature for several weeks.

♦️ Serve on pretty dish of your choice and top with some GOLCHIN edible fragrant rose buds on top.
